Preheat the oven to 400°F (200°C). In a bowl, combine all the ingredients and mix well. The more you mix, the fluffier the mixture will become. For convenience, you can use a stand mixer and knead for 5 minutes.

Next, shape the mixture into a long loaf and wrap it in nonstick parchment paper. Place the gyro loaf on a baking sheet and bake in the oven for 1 hour.

Remove the baking sheet from the oven, take off the parchment paper, and continue baking for another 20 minutes. Let the gyro cool, slice it thinly, and serve with potatoes, salad, and pita bread.
