Sauté minced garlic and diced onion in a large deep skillet with olive oil over medium heat until the onions are soft and transparent (about 5 minutes).

Add the canned tomatoes, smoked paprika, cumin, oregano, red pepper flakes, and some freshly cracked pepper. Stir to combine.

Simmer, stirring occasionally for 5-7 minutes. Salt to taste

Make 4 wells in the sauce and add eggs. Cover and poach for 5 minutes. Top the skillet with the cheese and cilantro.

Add drained beans to the skillet, then stir to combine. Simmer for 2-3 minutes more.
