It's a healthy lunch box recipe which can be enjoyed by kids and adults too.
Steps

Wash and rinse proso millet 2-3 times. Let it soak for 15 minutes. Throw away the water and in the fresh water boil it with 2.5 cups of water in an open vessel until it's done. Remove the extra water if any.

Let the millet cool down completely.

Take paneer in a bowl, add salt and black pepper powder to it and let it rest for 15 minutes. Lightly roast them in ghee for 2 minutes on both the sides.

Now while serving, add all vegetables I.e. tomato, cucumber, capsicum, sweetcorn kernels and lettuce in a bowl. Remove the extra water.

For making the salad dressing, add olive oil, lemon juice, salt and black pepper powder and mix them well.

Now add millet to the vegetables and groundnuts. Add the prepared dressing to this and add paneer cubes. And enjoy!

You can add vegetables of your own choice. You can also add green chutney to this salad. This salad can be also packed for lunch by packing everything differently.
