Every year I grow my favorite herbs and it is a task putting them up for the winter.
I learned this from a nice Greek🇬🇷 lady. At the time I needed a way to have fresh basil all winter without keeping the plants alive indoors and it's perfect! It's tedious but it is so worth it. But then again, tedious is what I do for a living!! 🤣

Ingredients

  1. Fresh Basil, lots of it (I used 3 tall bushy plants)
  2. Olive oil (I used 16.9 oz)
  3. Large mason jar (I used half gallon)
  4. spoonLong plastic or spatula

Cooking Instructions

    Cut the whole basil plant from the base, rinse it well with water and give it a good shake or 2. This pic was from early July

    Hang it upside down or lay it in a dish rack to drain all the water off

  3. 3

    Start picking all the leaves off the plant and do this carefully not to bruise them

  4. 4

    Grab your jar, olive oil, and your spoon or spatula and add a handful of leaves followed by a little olive oil at a time. Repeat

    Carefully pack it down occasionally with the spoon very carefully. If you bruise basil leaves they will turn black! DO NOT CUT the basil! It will for sure turn black

  6. 6

    Keep going until you have a full jar or if you think you have enough
    And put the date on it

  7. 7

    Place the lid on tight and turn jar upside down to saturate fully with the oil. Roll it around then place in fridge upright for the winter and every time you need fresh basil get a spoonful! Your welcome 😋
