Just like other pizzas, a pizza dough bottom is topped and baked with fresh ingredients, but fruit pizzas are made with sweet dough and are decorated with strips of sweet dough and the topping is fruit only. A medieval recipe, originally made with dried fruits. This recipe also has a vegan version below.

Ingredients

1 hour prep, 1/2 hour bake
2 people. 4 desserts
  1. 1 1/2 Cupall-purpose cake flour
  2. 2 Tbsbrown sugar
  3. 1 Tspyeast
  4. 1 Tspsea salt
  5. 1/4 cupDairy or coconut milk
  6. 1large fresh farm egg or Tsp corn starch dissolved in Tbs warm water
  7. 3 TbsUnsalted dairy or coconut butter
  8. 1 poundsweet fresh plums, like Mirabelle plums, washed, sliced, or dried
  9. Equipment: 7” spring form, dough mixer
  10. Cost: dough $1, fruit filling free from garden or $2 at the farmers market

Cooking Instructions

1 hour prep, 1/2 hour bake

    In mixing bowl, mix warm milk and yeast with 2 Tbs of brown sugar, watch till activated, it will foam. Cover with flour, indent in center to add egg yolk or corn starch, 2 Tbs softened butter, Knead till dough is smooth. Cover bowl. Let rise till double, about an hour. Sprinkle salt on top.

    Rub inside of 7” spring form with butter. Roll dough out on flour dusted board, 7” wide and 10” long. Press springform in dough to get the bottom. Slice 10 slices of 1/4” off the dough. Press 7” round inside the form on the bottom. Perforate the bottom dough with a fork. Press two strips of dough into the side of the springform with the leftover dough.

    Wash and slice plums, dispose of pits in garden fermenter, layer plums in springform. Arrange dough strips on top, stretch and fold one end around the edge.

    Bake at 425F for 30 minutens or till pizza is golden brown. Pizza will double in height. Cool till pizza pulls back from spring form sides, slice and serve warm or cold.

Wow I bet it tastes good too 😋 I love plums but now I really love cherry plums! And I bought a whole bag of them a few weeks ago and ate them like they were candy!
