This eggplant dip is a classic recipe from Turkish cuisine. It can be served hot or cold, as a side dish or on its own as an appetizer for dipping. The original recipe includes sesame paste in the mix, but I didn't have any this time ;)

Cooking Instructions

Roast the eggplants and peel them.

Place in a bowl and add the rest of the ingredients to taste. I don't add garlic, but it's an option...

Blend briefly.

Taste and adjust the seasoning if necessary. Serve with a drizzle of olive oil and a sprinkle of ground cumin on top.

Playing around with a few roasted eggplant recipes, I decided to cook them face up first to get the skins soft. Then putting them face down on the baking sheet allows them to cook in their own juices, sort of an eggplant confit, if you will. The flavor is creamy and sweet.
