Place the chicken thighs (cut into pieces) in a pot of cold water. Simmer over low heat until the water boils and scum rises to the surface. Remove the chicken and rinse under running water to clean.

In a clean pot, add fresh water, ginger slices, rice wine, and the cleaned chicken pieces. Bring to a boil, then reduce to low heat and simmer for 30 minutes.

After 30 minutes, add the winter melon chunks and cook for another 10 minutes.

Season with salt and mushroom seasoning powder.
