Assemble ingredients

Cut / slit egg plant, marinade with salt + turmeric powder + red chilli powder and keep aside for 10 - 12 minutes.

Assemble ingredients for gravy, make smooth paste of grated Coconut, paste of Cashews, make paste of poppy seeds + sesame seeds + ginger + green chilli.

In moderately heated pan add oil, allow to heat and fry the marinaded Egg plant till soft and golden brown.

Fry under medium to high heat and keep aside.

In same heated oil, add cumin + mustard seeds and allow to crackle, then add chopped Onion and sauté for a minute, then add chopped Garlic + 1 green chilli and sauté till onion is golden brown.

Add all the paste along with 4-5 tbsp water and sauté for 4-5 minutes.

Add salt + all spices + 2 tbsp water and sauté for 2-3 minutes till masala leaves Oil.

Add water + tamarind pulp + salt as required and cook for 3-4 minutes under high flame.

Add fried Egg plant and cook for around 4-5 minutes.

Switch off flame and keep in stand by mode for 2-3 minutes.
Dish is done. - 12
Serve with Phulka / Paratha.
