Steps

Cover chicken with parchment paper and use back of a frying pan to smash to around 1cm thick.

Coat chicken in egg wash then dip in breadcrumbs.

Shallow fry the chicken in a pan with oil just covering the bottom until cooked through.

Mix coleslaw mix, white wine vinegar and mayonnaise and serve with the cooked fried chicken.
