Ingredients

Serves 6 servings
  1. 1 cupwheat berries (about 200 grams)
  2. 3 cupswater (about 710 ml)
  3. 2eggs, beaten
  4. 2 tablespoonsvegetable oil
  5. 1 clovegarlic, minced
  6. 1 teaspoonginger, minced
  7. 1/4 cuponion, diced or thinly sliced (about 40 grams)
  8. 3/4 cupred and green bell peppers, diced (about 100 grams)
  9. 2 cupsshiitake mushrooms, sliced (about 140 grams)
  10. 2 cupsnapa cabbage or regular cabbage, chopped (about 140 grams)
  11. 3/4 cupcooked green beans, sliced (about 80 grams)
  12. 2 cupsbean sprouts (about 100 grams)
  13. 2 tablespoonssoy sauce
  14. 1/4 teaspoonsalt

Steps

    In a pot, combine the wheat berries with the water. Bring to a boil, reduce the heat, cover, and simmer for about 30 minutes or until tender.

    In a small skillet, cook the beaten eggs into an omelet, then cut into small squares.

    Heat a large skillet or wok with the vegetable oil. Sauté the garlic, ginger, onion, and bell peppers together.

    Add the mushrooms and stir-fry for 1 minute. Add the cabbage and stir-fry for another minute.

    If you like, you can rinse the wheat berries before stir-frying. I didn't. Add the bean sprouts, egg squares, wheat berries, cooked green beans, soy sauce, and salt. Mix well and serve.
