This wheat berries stir-fry with vegetables turned out delicious. It's a great way to switch things up from the usual rice, potatoes, and pasta. I made it to go with some pork chops with cilantro sauce, and it was wonderful.

This wheat berries stir-fry with vegetables turned out delicious. It's a great way to switch things up from the usual rice, potatoes, and pasta. I made it to go with some pork chops with cilantro sauce, and it was wonderful.

In a pot, combine the wheat berries with the water. Bring to a boil, reduce the heat, cover, and simmer for about 30 minutes or until tender.

In a small skillet, cook the beaten eggs into an omelet, then cut into small squares.

Heat a large skillet or wok with the vegetable oil. Sauté the garlic, ginger, onion, and bell peppers together.

Add the mushrooms and stir-fry for 1 minute. Add the cabbage and stir-fry for another minute.

If you like, you can rinse the wheat berries before stir-frying. I didn't. Add the bean sprouts, egg squares, wheat berries, cooked green beans, soy sauce, and salt. Mix well and serve.
