For making vegetable 🥦🥕🌽cutlets, firstly finely chop cabbage, capsicum, French beans. Boil sweet potato in pressure cooker well.

In a pan heat 2 tsp oil. Add chopped green chilies, ginger & garlic. Stir for 2-3 min. Then add 🥕carrots+grated Beetroot. Stir for 5 min Then add French beans, capsicum.You can add chopped onions if you like. Stir all veggies for 10 min. Then add salt. Stir again so that all moisture should be evaporated. Once veggies are semi-cooked, turn gas off. Set sabji aside & allow it to cool.

Mash the boiled sweet potatoes well. Now transfer cooked mixed sabji into big bowl. Add mashed sweet potatoes. Add coriander powder, cumin powder, aamchur powder, garam madala. Combine all & mix well. Then add rice flakes powder. Combine and mix everything thoroughly to make the cutlet mixture dough stiff.

Mixture dough is ready to make cutlets. Take any type of cutlet mould. I used heart shaped mould. Fill it with the mixture & make heart shaped cutlet. Make all cutlets in the same way.

To make slurry, In a small bowl add 1 cup all-purpose flour & 2 tsp cornflour. Add salt. Add 3/4 cup water & mix well to make slurry.

Take a cutlet and dip in the all-purpose flour paste gently. Coat the paste evenly all over the cutlet. Dredge the cutlet evenly with the breadcrumbs and dust of any excess breadcrumbs.

Heat 4-5 tsp oil in a pan. Place ready cutlets into pan. Fry on medium heat. When one side is light-golden or golden, turn over gently with a spatula and fry the second side. Add more oil if needed while frying.

Once turned golden brown from both sides, take off from pan. Serve vegetable cutlet hot with coriander chutney or tomato ketchup or any dip of your choice.
