550. California Farm Broiled Green Lip Mussels

Mussels from New Zealand! It is the end of winter over there, good time to harvest mussels. They cook them in mussel broth and ship them here frozen. Our local seafood store carries them, I put an olive oil lemon zest garlic bread crumb topping on top and broil them. Delicious with shoestring french fries and a strong California Chardonnay white wine. The leftover shells are crushed for chicken feed and plant fertilizer.

Ingredients

French fries 30 min, mussels 10 minutes
2 people, dozen stuffed mussels each
  • 2 poundscooked frozen New Zealand mussels in the half shell, about 2 dozen
  • 2 Tbsolive oil
  • 1/2 Tspbreadcrumbs per mussel, soaked in mussel juices
    California Farm Croutons and Breadcrumbs
  • 1 Tbsfinely shaved green chinese onion
  • 1 Tbsshredded fresh celery leaves
  • 1chopped small fresh Birds Eye Thai pepper
  • 1minced elephant garlic clove
  • Zest of one lemon
  • Juice of one lemon
  • Tbsbalsamic vinegar
    California Farm Home Made Balsamic Vinegar
  • Tspflaked Maldon seasalt
  • Serve with 1/4” thin fries made from large russet potato in air fryer
    California Farm Rotisserie French Fries
  • Equipment: broiler and roasting rack, olive oil sprayer, kitchen mallet
  • Cost: mussels $5 a pound, topping 50 cents, french fries 50 cents, per dinner $6

Steps

French fries 30 min, mussels 10 minutes
  1. 1

    Bake shoestring french fries in your airfryer, 30 minutes, 400F. Keep on warm dinner plate.

    Thaw whole mussels in fridge. When thawed, open mussel holding it flat to keep the juice from spilling and use mussel juice to soak breadcrumbs. Drip juice over breadcrumbs, lay mussels on broiler rack.

    Mix topping ingredients in bowl: mussel juice soaked breadcrumbs, green onion, garlic, minced fresh celery leaves, shredded thai pepper, lemon zest, balsamic vinegar, olive oil. Tsp on top of each mussel. Spray olive oil on top for broiling. Position on highest broiling rack setting in air fryer oven.

    Broil 10 minutes in air fryer or other oven at 400F degrees, serve with fresh half lemon for squeezing juice over broiled mussels to taste. Pairs well with a strong California Chardonnay white wine and shoestring french fried potatoes.

    Crush mussel shells to small pieces with kitchen mallet and use as chicken feed to strengthen their egg shells. Or pulverize crushed mussels to use as fertilizer on your potted plants or in your garden for their calcium and to repel snails and slugs around vegetables.
