Ingredients

Serves 3 servings
  1. For the marinades:
  2. 1 1/3 lbstender beef (such as for fondue) (about 600 grams)
  3. 1/2 stalklemongrass
  4. 1/2 inchfresh ginger (about 1 cm)
  5. 1shallot
  6. 1red chili pepper
  7. 1 tablespoonsesame oil (15 ml)
  8. 1 tablespoonoyster sauce (15 ml)
  9. 1kaffir lime leaf, or zest of combava, or lime zest
  10. For seasoning the tartare:
  11. 1lime
  12. 1 tablespoonsesame oil (15 ml)
  13. 1 tablespoonoyster sauce (15 ml)
  14. 1 tablespoonmayonnaise (15 ml)
  15. 1 tablespoontoasted sesame seeds (15 ml)
  16. Chives, mint, and cilantro, finely chopped
  17. Salt and pepper

Steps

    Crush or blend the ginger, lemongrass, shallot, kaffir lime leaf or combava zest (note: combava is very strong in flavor) or lime zest to make a paste. Mix with the sesame oil and oyster sauce, then marinate the beef in this mixture for at least 1 hour in the refrigerator.

    Sear the beef over high heat for 1 to 2 minutes on each side, depending on your preference. Chop the beef with a knife, add the chopped fresh herbs, mayonnaise, oyster sauce, lime juice, and sesame oil. Mix well and chill.

    Before serving, shape the tartare using a ring mold, sprinkle with toasted sesame seeds, red chili, a slice of lime, and fresh herbs. Add salt and pepper to taste.
