I love tartare, but for Thai-style beef tartare, I prefer it lightly seared—searing the meat over high heat for 1 to 2 minutes lets the spices fully develop their flavors...😋

Crush or blend the ginger, lemongrass, shallot, kaffir lime leaf or combava zest (note: combava is very strong in flavor) or lime zest to make a paste. Mix with the sesame oil and oyster sauce, then marinate the beef in this mixture for at least 1 hour in the refrigerator.

Sear the beef over high heat for 1 to 2 minutes on each side, depending on your preference. Chop the beef with a knife, add the chopped fresh herbs, mayonnaise, oyster sauce, lime juice, and sesame oil. Mix well and chill.

Before serving, shape the tartare using a ring mold, sprinkle with toasted sesame seeds, red chili, a slice of lime, and fresh herbs. Add salt and pepper to taste.
