Cooking Instructions
- 1
Add the water, honey and yeast to a liquid measuring cup and set aside for the yeast to begin to grow (about 5 minutes).
- 2
Measure the flour and salt into a large bowl and whisk together. Add the yeast mixture to the flour mixture and mix together well with a wooden spoon or a rubber spatula until a rough dough forms.
- 3
Preheat your oven to 425 degrees Fahrenheit and prepare 2 baking sheets by lining them with parchment paper.
- 4
Turn the dough out onto a well floured surface and knead for about 10-15 turns until the dough forms a ball and isn't too sticky. Add the dough ball back into the bowl and cover with plastic wrap, letting it rise for about 60-90 minutes or until the dough doubles in size.
- 5
Once the dough has risen, turn it out onto your work surface (flour the work surface a little bit, but this dough is a bit on the dry side so don't add too much flour!).
- 6
Add the water and honey to a pot and let it come to a low boil, turning the heat to medium after it boils to maintain a very gentle boil. As you wait for the water to boil, divide the dough into 12 pieces (as evenly sized as possible). Roll each piece into a ball with a smooth surface.
- 7
To form a bagel shape, press your middle and ring finger (together) into the center of one ball to make a hole right through the middle. Move your fingers gently in a circular motion to make the hole a little bit bigger.
- 8
Then, holding the bagel with your thumbs inside the hole, pick it up off the work surface and stretch it gently to make the hole bigger. The goal is to make the hole a little bigger than you actually want it, as the dough will shrink back slightly during baking.
- 9
Let the bagels you've formed sit on the work surface for about 5 minutes before gently lowering them into the boiling honey water 1 or 2 at a time. Let the bagels boil for about 1 and a half to 2 minutes per side. Don't skip this step! This is what gives bagels their chewy texture and perfect crust and baking them without boiling will not give you the same result.
- 10
After boiling, place the bagels on a parchment paper-lined baking sheet (6 bagels per large baking sheet). Whisk the egg and water together and brush the mixture lightly over the tops of the bagels.
- 11
Sprinkle the Everything Bagel Seasoning over the top of the bagels generously, dividing the seasoning between all the bagels (use more or less if you like).
- 12
Bake at 425 degrees Fahrenheit for about 15-18 minutes, or until golden brown. Let the bagels cool on the baking sheet for a few minutes before moving them to a wire rack to cool completely. Enjoy with some cream cheese, toasted, or however you like!

I wanted to use all purpose flour to make bagels for sandwiches. I put this recipe together to use up some whole wheat flour and rye. It's also a reminder for me.I've adjusted the amount of water so that the dough is easy to knead. Hence, I don't think you'll have much trouble kneading it.You could either use fine or coarsely ground whole wheat and rye. Also adjust the time for rising to your preference. Easy Hand Kneaded Bagel Easy Hand Kneaded Bagel
I arranged a recipe that I learned, to make it easier to multiply the serving sizes. It's perfect for beginners. When kettling, if you use water that is vigorously boiling, the bagel's surface turns out rough. Instead, use water that is lightly bubbling. When making 4 bagels out of this recipe, each is mini-size at 7-8 cm in diameter. When letting the dough rest during the winter time, it may help to control the temperature by placing it in the microwave along with a mug filled with hot water. Better yet, place the mug inside the microwave and warm up the space beforehand. Recipe by mini cookpad.japan -
Soft Bagels Soft Bagels
I like chewy bagels, but I like soft and dense ones as well. These bagels can be used in many ways and are easy to eat. They're also good for sandwiches.Cover the dough with a damp cloth from the first rising to the shaping stage (Since the rising time is not very long, it is technically called “floor time”). Cloth is not needed during the second rising. For a smooth finish, remove the trapped air out of the dough really well before shaping the dough. Recipe by Masacchi cookpad.japan -

Whole Wheat Bagels Whole Wheat Bagels
I like healthy bagels. I heard that the whole wheat ones are lower in calories I decided to give them a try.I often add dried fruits to reduce the amount of sugar but even plain these bagels are delicious because of the whole wheat flavor. If you have made plain bagels before this way is similar. You have to be careful about the amount of water and the amount of time for proving. The room temperature and humidity will affect them. Adjust the amount of water and proving time as it goes. You can easily decide the water content as you knead the dough.
