Stir-Fried Bean Sprouts and Pork with Fish Sauce

Whenever it's really hot, I don't feel like cooking, so I thought up a recipe I could make in a jiffy to re-energize my body.
I had a lot of fish sauce left over, so I used it to flavor this. The exotic fragrance encourages your appetite.
The key is to stir fry the pork until it's crispy and slightly browned!
To enjoy the crispy texture of the bean sprouts, stir fry it quickly over high heat. As time passes moisture starts to come out of bean sprouts, so I recommend eating this right away.

Cooking Instructions

Rinse the bean sprouts and drain in a colander or sieve. Wash the ginger well, and julienne very finely with the skin on. Finely chop the green onions.

Cut the pork into 1 cm wide pieces. Put into a bowl, season with salt and pepper, and coat well with katakuriko. Mix well with your hands.

Heat up a frying pan with the sesame oil over medium heat, and stir fry the ginger. When it's fragrant add the pork, and stir fry until cooked thoroughly.

When the pork is cooked and slightly browned, swirl in the fish sauce and stir fry quickly.

Add the bean sprouts and stir fry quickly for 1 to 2 minutes over high heat. Sprinkle with black pepper, transfer to serving plates and add some chopped green onions to finish!

Variation: Squeeze on some lemon or lime juice to enjoy a different flavor. The acidity is very refreshing!
