Oxtail Stew! With or Without Instant Pot

Prepare all the ingredients first: Peel and slice the carrots. Peel and dice the onions. Peel and chop the garlic. Clean and chop the celery. Clean and grate the tomatoes. Clean and dice the red bell pepper. Peel and chop the leek.

Season the meat with salt and pepper, dredge in flour, and sear in hot oil for about 13 minutes until well browned on all sides. Once browned, set aside in a deep plate.

In the same pot, add the garlic, onion, leek, and celery with a generous pinch of salt. Sauté for 5 minutes.

Add the carrots and red bell pepper with a pinch of salt. Cook over low heat for 15 minutes until softened.

Add the grated tomato, a pinch of sugar, season with salt and pepper, and cook for 10 more minutes.

Return the meat to the pot, then add the red wine. Increase the heat and cook for 15 minutes to let the alcohol evaporate. Add the beef broth and bay leaves. Cover and simmer over medium-low heat for 3 hours if using a regular pot. After cooking, remove the meat, blend the vegetables into a sauce, then return everything to the pot and cook together for 15 more minutes over low heat. Ready to serve!

If you're using an Instant Pot, follow the same process using the sauté-high setting. When it's time to cover, set to Pressure Cook for 45 minutes with the valve sealed. After the time is up, let it rest for 5 more minutes, then release the pressure. Remove the meat, blend the vegetables, return the meat to the pot, and cook for 15 more minutes on sauté-medium. Done! The Instant Pot saves you time.
