This simple and easy one is always a hit in my home. It has both Okra and Potatoes in it. It's a simple fry and goes well with Chapatis or Rotis for Breakfast. With simple ingredients, it's a winner all the way. And nothing can ever beat it or ger close to it in terms of taste and flavour. The texture too is just right. Potatoes and Bhindi do pair very well. Infact this one is a sure shot hit with my family. And it's perfectly okay for a yummy Breakfast on any day. It's a best Tiffin box or Lunchbox idea too.
With Potatoes added, get rest assured about the kids liking it. They would love it. Not only is it easy and healthy, it gets done quickly as well. If you want it soft or crisp, it's upto you. Stirring it a bit more will give you crisper fry and doing it for a little lesser time would give you a bit softer fry. Therefore with this one single recipe, you get two different varieties of Fry. One a normal one, juicy and tender Bhindi and Aloo Fry and the other a bit on the crisper side.

Wash them thoroughly and pat dry before cutting into thin slices. Set aside. Also cut the potatoes into mini cubes. It's a simple fry. There are not many ingredients involved.

Heat a broad pan with oil on a low. Add curry leaves and slit green chillies or even finely chopped if desired. Do not add if making for the kids. Now add the ginger garlic paste. Fry for a minute. And then add the potatoes with the powdered spices. Let them cook a little so that they are soft before adding the okra. If required just splash some water to facilitate easy cooking.

After the potatoes are done, add the okra or the bhindi. Mix well and cover. Let it cook for a few more minutes until the raw smell goes away. Adjust salt. Garnish with some chopped coriander leaves.

Relish for breakfast with homemade simple Chapatis or Rotis. Enjoy! Yum!
