Coffee Jelly Mooncakes

I still vividly remember the Mid-Autumn Festival, carrying lanterns in August, enjoying the festive treats my mom made... such beautiful childhood memories.
This year, instead of traditional baked or sticky rice mooncakes, I chose to make a lighter, less sweet version. This is a healthy dessert made from jelly and coffee, with carrot used in place of salted egg yolk. It's unique and delicious!

Steps
- 1
Prepare the ingredients for the “salted egg yolk.” Clean and thinly slice the carrots, then blend with 3/4 cup water (200 ml). Strain to remove solids.
- 2
Pour the carrot juice into a pot and bring to a boil. Add agar powder and stir until dissolved, then mix in 1 tablespoon sweetened condensed milk. Pour into small round molds (such as ice cube trays) to form the “egg yolk” shape.
- 3
To make the flan layer: Blend milk, cheese, and 2 egg yolks until smooth. Pour into a pot and heat until just boiling, then add agar powder and sugar, stirring until dissolved. When the mixture thickens slightly, reduce the heat to low.
- 4
Once the “egg yolks” have set, remove them from the molds. Pour a layer of flan mixture into small molds, let it set slightly, then place a “yolk” in the center. Pour more flan mixture on top to cover the “yolk.”
- 5
For the coffee jelly: Bring 2 cups water (500 ml) to a boil. Add sugar and agar powder, stirring until completely dissolved. Add instant coffee powder and mix well. Pour the coffee jelly into mooncake molds and let it set. Once the flan “eggs” have set, remove them from their molds and place them into the coffee jelly molds. Pour more coffee jelly to fill the molds, then refrigerate until fully set.
- 6
Remove the mooncakes from the molds.
- 7
These mooncakes are super healthy!
