Ingredients

Serves 2-3 servings
  • 2 tablespoonspeanut oil (30 grams)
  • 1/8 teaspoonSichuan peppercorns (0.5 grams)
  • 2 clovesgarlic, finely chopped
  • 2red chili peppers, thinly sliced
  • 2 tablespoonschopped scallions (20 grams)
  • 1/2 teaspoonsugar (2 grams, optional)
  • 2 tablespoonssesame paste (30 grams)
  • 1/4-1/3 cupnoodle cooking water (60-90 grams)
  • 1 1/2 tablespoonslight soy sauce (25 grams)
  • 1 1/2 teaspoonsblack glutinous rice vinegar (8 grams)
  • 6.5 ouncesdried noodles (180 grams)

Steps

  1. 1

    Place the garlic, chili peppers, scallions, and sugar in a small bowl. Set aside.

  2. 2

    Pour the peanut oil and Sichuan peppercorns into a small saucepan. Heat over low until the oil just begins to smoke, then strain the hot oil into the bowl from step 1.

  3. 3

    Cook the dried noodles according to the package instructions.

  4. 4

    Thin the sesame paste with the noodle cooking water, then mix in the soy sauce and black vinegar.

  5. 5

    Place the cooked noodles in a large bowl. Toss with the garlic-pepper oil from step 2 and the sesame sauce from step 4. Serve immediately.
