I wanted to make something else with the peel left over from making kurikinton.
If the potato is still unpeeled, it's okay to peel it thickly. Recipe by Ori-vu

Steps
- 1
- 2
Take the peel and soak in water to remove the bitterness. Once the water becomes cloudy, repeat this 2 to 3 more times.
- 3
Drain the water and them cut the peel thinly into 4 - 5 cm long by 3 mm wide pieces .
- 4
Add the vegetable oil to a frying pan and stir fry the pieces of peel over medium heat.
- 5
Turn the pieces over in the oil, making sure they are all evenly coated.
- 6
Once they are all soaked in the oil and they have turned yellow, add in the mirin and the mentsuyu. Once the liquid has disappeared, turn off the heat.
- 7
Once they're done cooking, add a pinch of salt and they are ready to eat. They are delicious when cooled, and they are great in a bento or as a sweet snack.
