A simple Mutton Jalfrezi in Thakurbari Ranna Style with a fusion of traditional and contemporary flavors. Ingredients

3 hrs
4 servings
  • 1 kgMutton
  • 3potatoes halved equally
  • 3 tbspghee
  • Salt to taste
  • 1 inchCinnamon
  • 4Green cardamoms
  • Cloves4
  • 2bay leaves
  • 3 tablespoonsSunflower Oil
  • 3 largeOnion sliced
  • 1 tbspGarlic paste
  • 4-5Green chillies roughly chopped
  • 2Dry red chilli
  • 1 tspKashmiri Red chilli powder
  • 1 tspTurmeric powder
  • 1 tspCumin powder
  • 1 tbspCoriander powder
  • 1 mediumGreen capsicum diced
  • 1 mediumTomato sliced
  • 1 tbspGinger paste
  • 1Plain Tea bag
  • 1Green capsicum diced

Steps

  1. 1

    Add salt to mutton and mix well. Fry the mutton pieces in ghee till slightly roasted. Take out the fried pieces in a container. To the remaining ghee add 2 tbsp oil and fry 1 onion till light brown.

    Now add the fried onions to the fried mutton, add sliced tomatoes,chopped green chillies,ginger-garlic paste, turmeric powder, red chilli powder, cumin powder, coriander powder and marinate overnight.To oil in pan light fry the potatoes and green capsicum smeared with salt and keep aside.

    In a fresh pan add ghee and add the whole garam masalas,bay leaves,dry red chillies,rest 2 onions sliced and roast till the flavors come.

    Now add the marinated mutton and slow cook till oil releases on the sides of the pan.

    Meanwhile boil 1 cup water and dip the teabag and make a dark liquor by keeping for 10 minutes. Add the liquor and again slow cook till the color of the curry becomes dark.

    Now once the mutton is half done, add the fried potatoes and capsicum and cook till the mutton pieces are succulent and the potatoes are soft and nicely coated in the gravy.

    Serve and enjoy with steamed rice and green salad.
