  1. 3peeled pears, whole and poached in bottle of red wine
  2. 1 headromanesco florets, steamed, florets separated
  3. 1 cupcrumbled blue cheese, like Gorgonzola
  4. 3 Tbscane sugar
  5. 1 bottlestrong red cooking wine, condensed with sugar to wine syrup
  6. 1 Tspground cinnamon
  7. Equipment: pan with steamer
  8. Cost: pears $1, gorgonzola $2, romanesco florets $2, wine $5, other 20 cents, $2.55 per serving

    Steam the whole head of Romanesco ten minutes, cool. Separate the florets.

    In saucepan, put enough cinnamon and sugar, bottle of red cooking wine and water to submerge three whole peeled pears, boil till done, about an hour.

    Slice pears 1/4” thick lengthwise and arrange four slices on a plate. Put florets of romanesco on top. Taste the pear wine solution in pan, add sugar to taste and simmer till syrupy. Drizzle wine syrup over florets and pear. Arrange blue cheese on top. Serve.
