Ingredients

  1. 2 1/2 cupsAll purpose flour
  2. 2 tspcream of tartar
  3. 1 tspbaking soda
  4. 1/2 tspkosher salt
  5. 1 sticksunsalted butter (melted/slightly cooled)
  6. 1/2 cuplight brown sugar (packed)
  7. 1 cupgranulated sugar plus 2 tbs
  8. 1 tbsvanilla bean paste
  9. 2large eggs (room temp)
  10. 1 tbscinnamon

    Whisk flour, cream of tartar, baking soda and salt in a medium bowl.

    In a large bowl beat butter, and sugars. Scraping down the sides until fully incorporated. Scrape in vanilla bean paste and add eggs one at a time mixing in between. Beat until mixture is pale yellow and begins to thicken, falling from the beaters in a ribbon like stream (about 3 minutes). Reduce mixer to low and gradually add dry ingredients. Scrape down the sides and mix until fully incorporated. Let dough sit at room temp for 30 minutes to thicken.

    Preheat your over to 400 degrees. Whisk together 1tbs of cinnamon and 2 tbs of granulated sugar in a small bowl. Scoop about 1 oz of cookie dough and roll into a ball. Toss in the cinnamon sugar mixture and place them on a prepped tray about 3 inches apart (they spread while baking). Bake for 8-10 minutes or until edges are golden brown. Cool completely and enjoy :)
