Fry the chicken cubes until golden and set aside.

Caramelize the onions in a pan or a wok. Add in the pineapples and tomatoes.Stir fry and add the herbs.

Mix together soy sauce,sesame oil,ketchup,salt,sugar, tapioca powder in the 1/2 bowl of water.

Pour into the pan/wok and let boil with the pineapples and tomatoes.

Add the fried chicken cubes into the sauce. Lastly, add the cucumbers in. Serve with rice.
