Easy Chicken Rice with a kick Casserole

Easy, really good, with a kick.
I was looking for something easy, found a more complicated recipe, so modified it to make it easier, and use easier to get spices. Plus in our house, some like white chicken, and don't like dark, and the smart one (wink, wink) likes dark chicken, but not white meat so much. So we can handle both.
Also as per the list below, this has a very light spicyness level. You would really have to not like spicy at all to ramp it down.

Ingredients

4-6 servings
  1. 1 1/2 poundsboneless, skinless chicken
  2. 1 cuplong grain rice (uncooked)
  3. 1 3/4 cupschicken broth
  4. 1 cancream of mushroom condensed soup
  5. Spice Mix
  6. 1/2 teaspooncayenne pepper (adjust heat level to taste)
  7. 1 teaspoonchili powder
  8. 1/2 teaspoonground black pepper
  9. 1 teaspoonsmoky paprika
  10. 1/4 teaspoonground cumin
  11. 1 teaspoononion powder
  12. 1 teaspoongarlic powder
  13. to tastesalt

Steps

  1. 1

    Preheat oven to 350F

  2. 2

    Put all spice mix items in a small bowl.

    Thoughly mix the spices together. Set aside.

    Put the soup, broth and a pinch of the spice mix in another bowl.

    Whisk the soup and broth together.

  6. 6

    Place the rice into a 9 by 13 cake pan. I'm using Jasmine rice this time.

    Pour the soup mixture over the rice. Give it a little stir to even it out.

    Place the chicken pieces on top.

    Sprinkle the remaining spice mix over the whole thing.

    Cover TIGHTLY with foil.

    Bake 1 hour.

    Fluff the rice, cover loosely, let sit for 5 more minutes, so rice can absorb any other liquid.

    Serve

    Garnish - if desired, parsley, cilantro, green onion/scallion

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
