Rice with Aged duck legs and Chinese sausages

This is the dish that I grew up eating. The unique flavour from the dry aged duck and sausages combine to form a very smooth and mellow savouriness. When served with well-textured rice, it is a beloved dish in Hong Kong among people in all classes.
Simply put:
High heat till it boils
5 minutes on medium heat
Then add the meat
5 minutes on low heat
5 minutes with heat off (lid on the whole time)

Cook the duck thigh and Chinese sausages in a pot of boiling water for 2 minutes. This removes unpleasant flavour from the ingredient. After that chop them into desired pieces.

Prepare the special soy sauce. Add the soy sauce, sugar and Japanese sake together. Bring it to a light boil to make sure the alcohol has beeen evaporated and the sugar has been dissolved. After that, put the sauce on the side to cool down.

Rinse and wash the rice. Soke the rice for at least 30 minutes.

After 30 minutes, spread a thin layer of cooking oil at the bottom of the clay pot. (Please don’t use olive oil)

Place the rice in the pot and pour 1.1 cups of water

Put the lid on and turn the heat up to max until the water starts to boil

Once steam is coming out from the exhaust hole, turn the heat to medium and cook the rice for 5 minutes

After 5 minutes. Place the chopped duck and sausages onto the rice. Close the lid and cook it for low heat for 5 minutes.

Turn off the heat and do not open the lid. Steam the rice for another 5 minutes.

If you want the rice at the bottom to become crunchy, turn the stove to high heat for 20 seconds. Finally, Pour the soy sauce on to the rice and topped with some chopped spring onions.
