Granny would fix this the night before and pop it in the oven Thanksgiving morning “for the kids” because they are active and needed a good breakfast. She’d shoo the adults away and tell them to grab whatever. Pawpaw, always made the sausage, I’d never had “store bought” until he got older and sold all the farm animals. Eye-opener in the taste area! It just doesn’t taste the same. His was so much better!

Ingredients

  1. 1(16 is) package of bulk breakfast sausage
  2. 1onion, chopped
  3. 1(16 is) bag of shredded hashbrown potatoes, Granny cubed hers small
  4. 2 cupshredded cheddar cheese
  5. 6eggs, lightly beaten
  6. 1 cupmilk
  7. Pinchpaprika
  8. 1 (2.64 oz.)package of country gravy mix Granny used leftover brown gravy

Steps

    Preheat oven to 325* Grease 8x11 baking dish.

  2. 2

    Cook sausage in skillet over medium heat until browned and crumbly, about 10 minutes. Drain excess grease. Mix onion into sausage and spread over bottom of dish. Spread hashbrowns over sausage, top with cheese.

  3. 3

    Whisk eggs, milk & gravy mix together in a bowl until smooth. Pour over cheese. Sprinkle with paprika.

  4. 4

    Bake in preheated oven until a knife inserted into the center comes out clean, about 1 hour. Let stand 10 minutes to firm up before serving.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
