Texas Chili

Texas-style chili doesn't include beans; it's all meat and spicier than other American chili recipes. It's served with crispy corn chips and topped with sliced red onions, sour cream, chopped green onions, and cheddar cheese. It's very delicious. This recipe is even better than the one I posted before. The secret to this recipe is adding strong black coffee, which gives it a hidden depth of flavor and aroma.
If you can get Texas chili powder, that's even better because the taste and aroma are different from Thai chili powder. But since it's hard to find in Thailand, I just use regular chili powder.

Chop the bell pepper (remove seeds), onion, and garlic finely, then set aside.
Mix all the spice mix ingredients together and stir well.

Cut the bacon into small pieces. Choose ground beef with some fat (80:20).

Add the bacon to a pan over low to medium heat. Cook until the fat is rendered and the bacon is crispy, then remove the bacon and set aside.

Increase the heat to high. Once the oil is hot, add the ground beef, spreading it out evenly. Sprinkle with 1/2 teaspoon each of salt and black pepper. Let the beef brown, then flip and let it brown again. Remove the beef and set aside.

If there's too much oil, remove some, leaving about 2-3 tablespoons. Add the chopped onion, bell pepper, and garlic. Sauté until the vegetables are soft and fragrant.
Sprinkle in the spice mix and stir until aromatic. Add the ground beef and bacon back in and mix well.

Add the broth or water, tomato paste, and canned tomatoes. Use a spatula to break up the whole tomatoes. Add the turkey sauce and sugar, stir well, and bring to a boil. Then add the black coffee and mix well.

Reduce the heat to low, cover, and simmer for about 2 hours or until the meat is tender and the sauce is thick. Stir every 15 minutes to prevent the bottom from burning.

After the time is up, uncover. If the sauce isn't thick enough, continue to simmer until it reaches your desired consistency. Taste and adjust the seasoning as needed. I like to add a bit more salt and turkey sauce for a slightly salty and tangy flavor. If you like it spicier, add more chili powder.

To serve, I use crispy corn chips with a cheese flavor, but you can use your favorite. Prepare the sour cream, chopped green onions, sliced red onions, and cheddar cheese.
Spoon the chili into a bowl and top with sliced red onions, chopped green onions, sour cream, and cheddar cheese. Arrange the crispy corn chips around the plate.

Mix the toppings and chili together. The cheese will melt nicely. Use the crispy corn chips to scoop up the chili. It's delicious and very aromatic.

Another option is a chili dog, which goes great with hot dogs. Sprinkle cheese on top and bake or torch until the cheese melts.
