Ingredients

  1. 2 Tablespoons (30 ml)olive oil
  2. 1 cupchopped yellow onion (1/2 of a large onion)
  3. 1green bell pepper, diced
  4. 1red bell pepper, diced
  5. 1small jalapeño, minced (remove seeds and ribs)*
  6. 3garlic cloves, minced
  7. 1 teaspoonsalt
  8. 1/2 teaspoonfresh ground pepper
  9. 1/2 teaspoonground cinnamon
  10. 2 1/2 teaspoonsground cumin
  11. 2 teaspoonchili powder
  12. 1 teaspoononion powder
  13. 2 cupsvegetable broth (I used 1 C roasted garlic base and 1 C vegetable base)
  14. 3 cans (14 oz)petite diced tomatoes (I used 2 fire roasted and 1 regular)
  15. 1 can (15 oz)pinto beans
  16. 1 can (15 oz)kidney beans
  17. 1 can (15 oz)chili beans in sauce

Cooking Instructions

  1. 1

    Heat the olive oil over medium heat in a 5 quart (or larger) pot or dutch oven. Add the onion, bell peppers, and jalapeño. Stir and cook for 5 minutes as the onion softens. Add garlic, salt, black pepper, cumin, chili powder, and onion powder. Stir and cook for 1 minute. Add the remaining ingredients including black beans, if using.

    Place the lid on top, reduce heat to medium-low, and cook for 30 minutes, stirring occasionally.

    Serve with any optional toppings. I strongly suggest cilantro for a little fresh kick :)
