Mexican-Style Cauliflower Rice

In a skillet, sauté the garlic and onion in olive oil.

Add the celery, riced cauliflower, paprika or chili powder, cumin, and merkén. Mix well. Sauté the cauliflower for a couple of minutes. Do not overcook.

Add the pureed tomato, salt, and pepper. Heat through.

Serve immediately.
Note: The cauliflower should be slightly firm (al dente); it's better this way.
