Wash bean and pick bad ones out along with particles

Soak beans overnight in large pot. use cool water cover entirely

Drain and rinse beans and place in heavy castiron pot
- 4
Add onions, bacon, chili powder, brown sugar and salt and cover with at least 3-4 inches water (6-8 cups of water depending on how thick like beans)

Place pot on smoker (high heat side) to get boiling then move to warm end of smoker and simmer for at least 6-8 hrs (time so finish about time your smoked meat comes off smoker)

Lay 5-6 slices thick bacon on smoker to finish and place on beans cpl hours before done
