Ingredients

  1. 1 lbdried pinto beans
  2. 2 cupsminced yellow onions
  3. 1 cupchopped bacon
  4. 1/4 cupchili powder
  5. 1 tablespoonfine ground kosher salt
  6. 6-10squirts of worchester sauce
  7. 1/4 cupbrown sugar

Steps

  1. 1

    Wash bean and pick bad ones out along with particles

  2. 2

    Soak beans overnight in large pot. use cool water cover entirely

  3. 3

    Drain and rinse beans and place in heavy castiron pot

  4. 4

    Add onions, bacon, chili powder, brown sugar and salt and cover with at least 3-4 inches water (6-8 cups of water depending on how thick like beans)

  5. 5

    Place pot on smoker (high heat side) to get boiling then move to warm end of smoker and simmer for at least 6-8 hrs (time so finish about time your smoked meat comes off smoker)

  6. 6

    Lay 5-6 slices thick bacon on smoker to finish and place on beans cpl hours before done
