Have everything next to your pot

Heat sugar on Med heat. In a heavy bottom 2 or 3 qt sauce pan.

As sugar begins to melt stir vigorously with a whisk or wooden spoon.

As soon as the sugar comes to a boil stop stirring. If sugar begins to burn before Rest is melted next time add half a cup of water at the beginning

As soon as all the sugar has melted and is an amber color add butter whisk until melted take off the heat count to three then slowly add cream and keep whisking until smooth
