Ingredients

15 minutes
1 bowl
  1. 350 gfresh or frozen cranberries
  2. The peel and juice of two clementines,tangerines or satsumas
  3. 1 stickcinnamon
  4. 1 tspgrated fresh ginger
  5. 4cloves
  6. 50-75 gcaster sugar
  7. 2-3 tbspport

Steps

15 minutes
  1. 1

    Grate the ginger and squeeze the clementines.

    Add all the ingredients except the port to the pan.

    Simmer on a low heat for 5 to 10 minutes until the berries are soft and some are just beginning to burst. Taste and add more sugar if needed.

    Add the port then replace the lid and leave to cool completely in the pan so the flavours develop.

    When cool transfer to serving dishes, cover and keep in a fridge or a cool place. Serve at room temperature.

I enjoy cooking mostly because I like eating, but also because it's a great way to relax at the end of the day. I work in book publishing and especially enjoy creating cookbooks written by cooks who love cooking and sharing food rather than creating show stopping dishes that take days to put together. As Nigel Slater would say; 'we are, after all, simply making ourselves something to eat'. I live with my lovely daughter Isobel who rarely pays any kind of compliment but will occasionally admit something I've cooked was quite nice, and our dog Piper, who will eat anything.
