Wash and slice the leek. Sauté in a skillet with a little oil until tender, then remove from heat.

In a bowl, beat the eggs and cream together. Season with salt and pepper.

Roll out the puff pastry in a tart pan. Add the cooked leeks. Pour the egg and cream mixture over the leeks. Cut the goat cheese into small pieces and arrange them on top of the tart.

Bake for 30 minutes in a preheated oven at 350°F (180°C).
