Braised Pork Rice with Braised Eggs and Fried Tofu

The braised pork rice sold in stores is usually rich in gelatin and has a sticky texture. The secret is to add pork skin while braising. At home, you can buy pork belly strips with skin at the supermarket to achieve the same effect.
Tip: Don't eat it right after braising. Store it in the fridge overnight and reheat it the next day. The eggs and fried tofu will be more flavorful!

Peel and slice the shallots thinly.

Cut the pork belly into strips about 1/5 inch wide.

Heat 1 teaspoon of oil in a frying pan, add the shallots, and sauté until they are slightly golden.

Push the shallots to one side of the pan. Without adding more oil, add the pork belly strips and stir-fry until they change color.

Add white pepper, five-spice powder, and cinnamon, and stir-fry.

Add soy sauce, dark soy sauce, rice wine, and sugar, and continue to stir-fry until well mixed.
(Note) The purpose of adding dark soy sauce is to enhance the color of the sauce. If you don't have dark soy sauce, you can use regular soy sauce instead. - 7
Transfer the pork strips and sauce from step 6 to a small pot, add the broth, bring to a boil over medium heat, then simmer on low heat for 30-40 minutes.

Add the fried tofu to braise together.
(Note) Fried tofu can sometimes have an oily taste. I usually blanch it in boiling water to remove the oiliness before braising. - 9
Add the boiled eggs to braise together.
(Note) You can steam the eggs in a rice cooker with one cup of water in the outer pot, then cool them in cold water and peel. - 10
After removing all the ingredients, the remaining braising sauce can be used to braise cabbage. Bring the sauce to a boil, add 1/4 of a cabbage, and braise for 8-10 minutes to your desired tenderness.
