Spinach stir-fried with eggs is a healthy and quick dish, combining veggies and protein. Adding chewy enoki mushrooms brings even more nutrition.

Prepare all the ingredients.

Peel and mince the garlic. Rinse and slice the green onions.

Trim the roots off the enoki mushrooms, rinse, and cut into sections.

Crack the 3 eggs into a bowl, beat them, and add 1/2 teaspoon salt. Set aside.

Mix the seasoning ingredients together and set aside.

Rinse the spinach thoroughly, blanch in boiling water for 30 seconds, then cut into sections.

Heat a pan and add vegetable oil. Pour in the beaten eggs and scramble until just set. Remove and set aside.

In the same pan, sauté the minced garlic until fragrant.

Add the enoki mushrooms and stir-fry for 1 minute until tender.

Return the scrambled eggs and blanched spinach to the pan. Stir to combine.

Pour in the seasoning sauce and stir-fry until everything is evenly coated.

Sprinkle in the sliced green onions and mix well.

Tips:
* Spinach contains a lot of oxalic acid. Blanching it for 30 seconds after washing helps remove bitterness and improves texture and nutrition.
* Using high heat and hot oil makes the eggs fluffier and tastier.
