Ingredients

10 minutes
4 servings
  1. 2 cupswashed, peeled and grated cucumber
    Cucumber and Onion Raita for Biryani
  2. 4-5washed and chopped Tulsi leaves (Indian Basil)
    Tomato Basil and Garlic Soup
  3. 3-4small pieces of lemon grass
  4. 6-8washed and roughly torn mint leaves
  5. 2 tspCooking oil
  6. 1 tspmustard seeds
  7. 1 tspcumin seeds
  8. 1/4 tsphing powder (asafoetida)
  9. 1 tspCumin powder
  10. 1 tablespoonlemon juice
  11. 2-3washed, chopped Curry leaves
  12. 1 tspsugar
  13. 1 tspsalt or as per taste
  14. 1 tspchilli powder or 2 small chopped green chillies
  15. 2 tspwashed and chopped coriander leaves

Steps

  1. 1

    First, add the grated cucumber in a bowl. Squeeze any excess water and use it for making daal or kadhi.

    Then add chillies or chilli powder, salt, sugar, cumin powder to it and mix well.

    Then heat oil in a tadka pan. Add mustard, cumin and hing. Let it pop. Add curry leaves and lemon grass pieces, Tulsi leaves to it and mix gently.

    Add coriander leaves, lemon juice and combine well. Finely finish the Koshimbir with fresh coriander leaves. Serve with any day hot meal or rice and daal or chappatis. Enjoy!
