Ingredients

  1. Bread Batter
  2. 3bananas
  3. 80 gbutter
  4. 1/2 tspbicarbonate of soda
  5. 1 pinchsalt
  6. 100 gcaster sugar
  7. 50 gbrown sugar
  8. 1egg
  9. 1 tspvanilla extract
  10. 220 gplain flour
  11. 1 tspcinnamon
  12. 1/2 tspginger
  13. 1/4 tspnutmeg
  14. Chopped pecans/walnuts
  15. Milk chocolate
  16. Hazelnut chocolate
  17. White chocolate
  18. Streusel Topping
  19. 40 gplain flour
  20. 40 gbrown sugar
  21. 1 1/2 tbspgolden syrup
  22. 2 tbspbutter
  23. 1/2 tspcinnamon
  24. 1/4 tspginger
  25. 1/4 tspnutmeg

Steps

  1. 1

    Preheat the oven to 175°C.
    Butter and line an 8"x4" loaf tin.

  2. 2

    Mash the bananas with a fork and stir in the butter (melted).

  3. 3

    Whisk in the bicarbonate of soda, salt, sugar, egg and vanilla extract.
    Mix in the flour and spices.

  4. 4

    Chop up the nuts and chocolate into small pieces.
    Combine into the batter.

  5. 5

    Pour the batter into the loaf tin.

  6. 6

    Combine all of the streusel topping ingredients in a bowl.
    Place clumps of the topping on the top of the batter.

  7. 7

    Bake for 60 minutes.
    Take out and plunge a knife in 3 central regions of the loaf to test it is cooked all the way through.

  8. 8

    Allow to rest in the loaf tin for 10 minutes.
    Remove the loaf from the tin and rest on a cooling rack.
