Remove the heads, shells, and veins from the shrimp. Rinse and pat dry, then coat with sweet potato starch and set aside.

Arrange the pineapple pieces on a plate and set aside.

Heat oil in a pan. When the oil is hot, fry the shrimp coated in sweet potato starch until golden brown. Place the fried shrimp balls on top of the pineapple, then drizzle with mayonnaise and serve.
