We made pulled pork dinner portions and froze them. We also make a french bean dinner called Cassoulet, which we normally make with lamb, and tried it with pulled pork instead of lamb and liked it.

Here is the recipe for six dinners in one pan. Easy to make in dutch oven, air fryer or crock pot or slow cooker: prep and forget. The longer it simmers, the better it gets. Freezes well.

Ingredients

Prep under an hour, simmer 2 hours or longer
2 people, 6 dinners
  1. 1 cupdry northern white beans
  2. 1 cuplarge white lima beans
  3. 1/2 cuppork lard or duck fat
  4. 4 cupscold water
  5. Tspbaking powder
  6. 2 cupspulled pork, 400 grams
  7. 1 Cupred wine
  8. 1 Cupbroth
  9. 1 Cuphot water
  10. 1Green spicy poblano pepper diced
  11. 1Red sweet carmen pepper diced
  12. 2 clovesElephant Garlic diced
  13. 1Whole red onion diced
  14. 1Whole tomato diced
  15. 1 TspHerbs de provence
  16. For pulled pork recipe
  17. Equipment: medium size cast iron dutch oven with lid, or crockpot, or slow cooker or air fryer with 250F degree low setting
  18. Cost: red wine $1, pulled pork $1, vegetables $1, beans 50 cents, other 50 cents, $1.50 per dinner

Cooking Instructions

Prep under an hour, simmer 2 hours or longer

    Bring the dried beans to boil in cold in water with baking soda and lard or fat, boil hard for fifteen minutes, then simmer while dicing the vegetables. Beans will double in volume in minutes when boiled in baking soda. When doubled, add all other solid ingredients.

    Add all other ingredients with the wine and the broth. Add one more cup of hot water till ingredients are well covered, lid on top, set temperature on low flame or 250F degrees and timer to 2 hours or longer. DONE. Makes six dinners. Freezes well. Enjoy.
