Ingredients

4 servings
  1. 2 cupssmoked pulled pork
  2. 2 cupschicken stock
  3. 1 (12 oz)lager beer
  4. 1small white onion
  5. 3-4 clovesgarlic, minced
  6. 1 cupcorn
  7. 1 canblack beans
  8. 1 canfire roasted tomatoes, crushed or pulsed in a blender
  9. 2 tspchili powder
  10. 1 tspcumin
  11. 1jalapeno, sliced
  12. 1 tbspbutter
  13. 1 tbspcooking oil
  14. 1 tbspcorn flour or masa mix
  15. Garnish
  16. Sour cream
  17. Colby Jack, shredded
  18. Cilantro
  19. stripsFried corn tortilla
  20. slicesAvocado
  21. Fresh squeezed lime

Cooking Instructions

  1. 1

    Heat butter and oil in a pot. add onion and jalapeno to soften. Add garlic and cook another couple minutes.

    Stir in drained beans, corn, chili powder and cumin. Add tomatoes, beer, stock and pulled pork.

    Add corn flour and bring to simmer. Cook for about another 20 minutes uncovered, stirring occasionally.

    Ladle into bowls and top with garnish
