Ingredients

Prep half hour, deep fry less than half hour
2 people, 8 beignets
  • The Batter:
  • Tspbaking powder
  • Tspyeast
  • 1/2 cupcake flour
  • 1/4 cupfull milk
  • 1/4 cupyoghurt
  • 1large fresh farm egg
  • 1/4 Tspseasalt
  • Coating the apple slices before dipping in batter:
  • Sprinkle of sugar
  • Dusting of ground cinnamon
  • 1/4” slices from large Apple, skin on
  • Sprinkle of Powdered sugar
  • 2 quartsHigh smoke point Deep fryer oil like grapeseed oil
  • Equipment: wok with basket, remote thermometer, collander, mandolin slicer with 1/4” thick setting, apple corer, stainless steel funnel with fine mesh sieve to filter and reuse the oil
  • Cost: apple 50 cents, batter, other 50 cents, 8 slices, 13 cents each

Steps

Prep half hour, deep fry less than half hour
  1. 1

    Wisk egg, flour, milk, yoghurt, yeast, baking powder, till batter is smooth. Let batter rise till doubled. Add seasalt. Do drip test: dip spoon in, lift, if dripping, good, if runny, add flour.

    Heat oil to 375F degrees, then turn heat down to keep below smoke point. Drop test drop of batter in oil, use timer to check how long till batter has turned deep golden brown, probably 3 to 4 minutes.

    Core apple. Save core to freeze and make apple cider. Slice five slices of apple horizontally on the mandolin, save four, eat the endcap. Rub apple slices with sugar and cinnamon, both sides, dip in batter, fry in oil till deep golden brown, flip, brown other side. Keep warm in 250F degree oven. Slice off next five slices of apple: eat the top, use the other four, batter and fry. Put in oven.

    Mix leftover sugar and cinnamon in leftover batter, drop spoonfull in oil at a time, fry, making donuts. Add to apple beignets, sprinkle with powdered sugar, serve.

    When oil has cooled to handwarm, run through stainless steel funnel with fine mesh for reuse.
