Super Easy, Eggplant Gratin

We tried eating the eggplant that we grew at our house in many different ways and I tried making this because I felt like eating it.

It doesn't matter if the eggplant isn't lined up perfectly as it will go into the meat sauce anyway.
If there is some left over, it would be a nice idea to eat it with spaghetti or place it on top of rice to make it into a rice gratin style dish. For 2 servings. Recipe by norihime

Ingredients

2 servings
  1. 4Eggplant (slim Japanese type)
  2. 1 canor 1 bag Meat Sauce
  3. 1Mayonnaise
  4. 1Vegetable oil

Cooking Instructions

    Cut the eggplant in half lengthwise and then slice into roughly 1 cm pieces.

  2. 2

    Fry the eggplant until it's lightly browned using vegetable oil.

  3. 3

    Into a gratin dish, layer the meat sauce and eggplant on top of each other in that order 2 to 3 times. Make sure meat sauce is on the top layer.

  4. 4

    Add mayonnaise on top of the meat sauce and cook in an oven until it is browned. Then you're done.
