Slice the eggplants and potatoes into thin rounds and fry them in a little oil until done. Sauté the ground beef in oil, then add the grated onion and tomatoes. Add the cilantro, parsley, and spices.

In a saucepan, melt the butter and add the flour. Toast the flour well, then gradually add the milk while stirring continuously. Add salt, black pepper, and nutmeg. Stir until the sauce thickens, then add the egg yolk and a tablespoon of cheese.

In an oven dish, layer the potatoes, eggplants, and ground beef until all are used. Add the béchamel sauce, sprinkle with a little cheese, and bake until cooked through. Serve.
