Eggplant and Ground Beef Gratin

  1. 2large eggplants
  2. 2large potatoes
  3. 3 1/2 ozground beef (about 100 grams)
  4. Chopped cilantro and parsley
  5. 2grated tomatoes
  6. 1onion
  7. 1little tomato sauce
  8. Oil for frying
  9. Salt
  10. Turmeric
  11. Ginger
  12. Black and red pepper
  13. For the sauce
  14. 2 cupsmilk (about 1/2 liter)
  15. 2 tablespoonsflour
  16. 1 tablespoonbutter
  17. Salt and black pepper
  18. 1 pinchnutmeg
  19. 1egg yolk
  20. 1little grated cheese

Cooking Instructions

    Slice the eggplants and potatoes into thin rounds and fry them in a little oil until done. Sauté the ground beef in oil, then add the grated onion and tomatoes. Add the cilantro, parsley, and spices.

    In a saucepan, melt the butter and add the flour. Toast the flour well, then gradually add the milk while stirring continuously. Add salt, black pepper, and nutmeg. Stir until the sauce thickens, then add the egg yolk and a tablespoon of cheese.

    In an oven dish, layer the potatoes, eggplants, and ground beef until all are used. Add the béchamel sauce, sprinkle with a little cheese, and bake until cooked through. Serve.
