On a freezing day, a good bowl of French onion soup hits the spot 😋

Peel and thinly slice the onions. In a pressure cooker or multi-cooker, melt the margarine and sauté the onions until they are well browned.

Peel, wash, and cut the potatoes into pieces. Once the onions are nicely browned, add the potatoes and stir.

Add enough water to cover the ingredients. Add the bouillon cube, salt, and pepper. Cook under pressure for 10 minutes. Then blend the soup with an immersion blender.

Serve in bowls. Top with shredded Swiss cheese and garlic or plain croutons. Place under the broiler at 450°F (230°C) for a few minutes until nicely browned. Keep an eye on it. You can also enjoy it plain if you prefer.
