A traditional recipe from Spanish cuisine. I made it with turkey/chicken meatballs, but the original and tastiest version uses a mix of ground beef and pork, or just beef.

A traditional recipe from Spanish cuisine. I made it with turkey/chicken meatballs, but the original and tastiest version uses a mix of ground beef and pork, or just beef.

Preheat the oven to 350°F (180°C).

Chop the vegetables (onion, carrot, celery, and garlic). Place them in an oven-safe pot with a drizzle of olive oil and the bay leaf. Roast for 10 minutes.

Meanwhile, put the ground meats in a bowl, season with salt and pepper, and add the rest of the meatball ingredients. Mix until you have a smooth, even mixture.

Remove the pot with the vegetables from the oven. Add the tomato sauce, red wine, and beef bouillon concentrate. Return to the oven and roast for another 10 minutes.

While the sauce cooks, shape the meatballs and coat them lightly in flour. Line a baking sheet with parchment paper, place the meatballs on it, drizzle with a little olive oil, and bake for 5 minutes on each side until browned.

Add the meatballs to the pot and pour in the chicken broth. Bake for another 15 minutes so everything cooks together.

Remove from the oven and set the meatballs aside. Blend the contents of the pot until you reach your desired sauce texture, then pour it back into the pot with the meatballs and mix well.

Serve topped with fresh parsley. These go perfectly with potatoes or rice. Enjoy!
