Freeze drying and sun drying preserves foods before they spoil by removing the moisture. I freeze dry with a block of dry ice in a camper cooler. A 5 pound block of dry ice lasts 2 days.

Note: freeze drying is very expensive. It is not necessary to freeze dry ingredients that preserve well without freeze drying. Making a delicious freeze dried meal quickly with only one freeze dried ingredient in its own sauce, then adding other dry dinner ingredients that cook in hot water in half an hour in the same bag, that is the way to go for me.

Here are 6 meals and six desserts that reconstitute with hot water in a bag in half an hour, while camping or in an emergency. Always press food flat inside the quart bag and press air out. Always freeze the food first in your freezer before freeze drying in the campcooler.

Ingredients

48 hours to freeze dry, 1/2 hr to cook
2 people, 6 dinners, dessert snacks
  • 1 Bagdry ice, 5 pounds, lasts 48 hours, pick up in camping cooler
  • 1/2 poundeach fresh tuna, fresh salmon, ground beef, carne asada beef, pulled pork, ground lamb
  • 2 Tbseach orange juice soy sauce, honey garlic sauce, al pastor sauce, tomato sauce bolognese, panang coconut curry sauce, chili con carne onion sauce
  • 2 Tbschopped pancetta for the bolognese sauce
  • 1/2 poundeach strawberries, blueberries, raspberries, blackberries, flat slices of fresh banana, flat slices of mango
  • Equipment: quart freezer bags, camper cooler
  • Cost: A 5 pound block of dry ice is between $3 and $18, makes 2 pounds of freeze dried foods, 4 dinners, 75 cents to $4.50 plus cost of ingredients

Steps

48 hours to freeze dry, 1/2 hr to cook
  1. 1

    Turn your chest freezer to lowest setting, mine is below minus 30F. Freeze 4 quart freezer bags with food ingredients to be freeze dried, food pressed flat, air pressed out. When frozen solid, move to camper cooler. Cover with dry ice. Dry ice has a temperature of minus 108F. Put freeze dry item inside, like Yellowfin Tuna in Tbs orange juice and Tbs soy marinade. Freeze dry till brittle. One 5 pound bag of dry ice lasts two days before evaporated.

Put dinner inside, like lamb liver or pork or chicken with panang curry sauce. Freeze dry till meat is brittle. One 5 pound bag of dry ice lasts 2 days.

    For freeze dried fruit desserts, turn your chest freezer to lowest setting, mine is below minus 30F, freeze single fruit layer in gallon freezer bags. Then move to camper cooler, cover with dry ice. Freeze dry till fruit feels dry. Sugar will prevent the freeze dried fruits from breaking or becoming brittle. It takes one 5 pound bag of dry ice to freeze dry two pounds of berries or fruits.

I'm glad you posted this. Me and the hubs were just talking about freeze drying the other day. Now I found a recipe to make pemmican. They say it lasts for several years and is an excellent source of protein
