Grind 1/2 cup speculoos cookies (about 125 grams) into a fine powder.
Blend the remaining cookies with the milk, then combine with the powdered cookies. Chill in the refrigerator for 2 hours.

Shape the mixture into 10-gram balls. Chill again for 1 hour.

Melt the white chocolate in a double boiler.
Dip the truffles into the melted chocolate and place them on parchment paper. Chill for 1 hour.
