Orzo Pasta Kheer / Pudding with Date Palm Jaggery

Orzo is a traditional bronze cut Pasta made from organic durum wheat semolina or flour and slowly dried to preserve the authentic flavor.Orzo, also known as risoni, is a form of short-cut pasta, shaped like a large grain of rice. This small pasta is super versatile and can be prepared in a variety of ways.
To celebrate Harvest Festival Special and on the auspicious occasion of Makar Sankranti, I have given a twist to this Orzo Pasta by making a fusion recipe of a popular Indian dessert, rice pudding. This pasta is boiled with milk and newly harvested aromatic Date Palm Jaggery (available profoundly during the winter season ) until it attains a creamy texture. Mixed dry fruits and nuts of choice adds a crunch to this creamy kheer / pudding.

Heat ghee in a heavy bottomed wok. Lightly toss the dry fruits and set aside.To the remaining ghee, add the pasta and lightly toss till golden brown.Pour milk into it and boil.

Make a slurry of powder milk by diluting it with warm milk.Add this to the boiling milk.Add bay leaf, pinch of salt and crushed date palm jaggery to the boiling milk.Simmer in low flame and stir frequently till pasta is cooked and the jaggery (gur) has melted.The starch in pasta could burn at the bottom.So stirring often is needed.

Switch off flame when milk has reduced considerably and pasta cooked. Once cooled milk will thicken. Garnish with chopped cashewnuts and raisins.Chill and serve delicious and creamy Orzo Pasta Kheer (Pudding) with Date Palm Jaggery as an aftermeal dessert.
