Ingredients

  1. 5 poundsYukon Gold potatoes
  2. 2 cupsmayo
  3. 1 cuprefrigerated sweet pickle relish
  4. 2 tbspyellow mustard
  5. 1 tbspapple cider vinegar
  6. 1/2paprika powder
  7. 4-5hardboiled eggs
  8. 3celery stalks diced
  9. 1/2 cupsweet onion diced
  10. 1 tbspchopped dill
  11. Salt and pepper

Cooking Instructions

    Cut potatoes into quarters and boil. Once boiling, add salt and boil for another 13-15 mins.

    Add everything except eggs, dill, celery and onions to a bowl and stir.

    Once potatoes are soft, take off peels and add to bowl. Stir until well coated, then add rest of the ingredients to the bowl and keep mixing.

    Add dill and paprika last. Refrigerate for at least 4 hours then serve.

    Store in airtight container up to 1 week.
